Sanitation was rarely high on the priority list of our ancestors and the aroma of the MediƦval or Elizabethan street was clearly a memoriable experience. To overcome the pungent smells and diseases of the day, much time was spent in still rooms throughout the country devising ways of bringing relief to the interior of homes and to flavour the food. Expensive spices and medicinal herbs proved invaluable.
